The green papaya gratin is traditionally served as a main course, it can also serve as an original appetiser for a dinner aperitif. In small individual ramekins, you can serve them with other small salty and sweet delicacies.

Ingredients:
1 green papaya
200g smoked bacon
20 cl bechamel sauce
cheese
breadcrumbs
thyme
salt
pepper
Instructions:

Preheat the oven th.6 (180°C).
Peel the papaya and remove the seeds. Rinse it carefully then cook it for 10 minutes in a pot with salt and pepper to your liking without adding anything else. Then add the thyme and nutmeg. After 10 minutes of this cooking, add the bacon bits and cook for another 5 minutes.

Remove everything from the heat and drain.
Heat the béchamel sauce, then mix the sauce and the cooked papaya in a salad bowl.

Pour everything into a baking dish.
Add cheese and breadcrumbs on top of your green papaya gratin.

Bake for 15 mins. Let gratinate.
When the cheese is nicely browned, remove from the oven and let stand for 5 minutes.

Serve your green papaya gratin hot as a side dish to fish or white meat.
