You can also make banana jam without the rum.
Peel the bananas into thin slices.
Mix the water, lemon juice, sugar, cinnamon, split vanilla pods, and ginger.
Place over moderate heat and stir constantly with a wooden spoon until the syrup thickens.
Then add the banana slices. Cook for 15 to 25 minutes, stirring occasionally.
Remove from the heat and add the rum.
Put in pots.
